Abstract:
There is an old proverb that every country gets the cuisine it deserves. When gastronomy id everybody's favourite indoor sport, the results can be spectacular. It was no accident that Demel's superb "Konditorei" (pastry shop) in Vienna reached its apogee under Franz Joseph -an emperor who not only loved pastry but understood the art of making it.
